Intermezzo describes a light course designed to cleanse the palate or act as an “intermission” between the heavier courses of a formal, multi-course dinner.
Traditionally served after a fish course, intermezzo is usually a small glass of sorbet and is not generally served for less than a four-course meal.
The literal translation of the word intermezzo is “in between”.
